Karen Martini is a Domestic Goddess Too!

Nigella is definitely a domestic goddess but Karen Martini deserves the title too! Last week I cooked the most amazing meal using 2 recipes from her book "Cooking at Home". This book is full of gorgeous, mouth watering recipes that anyone who likes to cook will want to dive into! The stars of this magic meal were 'Marinated Chicken with Cinnamon, Garlic and Rosewater' and 'Spinach, rice and yoghurt salad with almonds'. The mix of rosewater and pomegranate molasses made the whole house smell amazing. When dinner was ready I wasn't sure if I wanted to eat it or wear it! It just smelt so good!

I was a little dubious about the whole rosewater thing having had some bad experiences with cheap rose scented hand creams in my younger years. They were not pleasant to wear and I certainly didn't want to eat them! However, the rosewater is much more subtle and smells like yummy turkish delight!

I think this will become my signature dish!

Marinated Chicken with Cinnamon, Garlic and Rosewater

3 cloves garlic

1 1/2 tsp ground cinnamon

1/2 lemon, juiced

4 sprigs thyme, leaves only

1 tsp freshly ground black pepper

sea salt

4 tbsp olive oil

120 ml rosewater

1.2 kg free range chicken, cut in half
3 tbsp toasted almonds
mint leaves and watercress leaves to serve
rose petals, to garnish (optional)

Dressing
1 1/2 small red chillies
3 tbsp pomegranate molasses
1/2 clove garlic, finely chopped
1 tbsp rosewater
4 tbsp olive oil
1 tsp caster sugar
Place the garlic, cinnamon, lemon juice, thyme leaves and pepper and salt to taste in a mortar and pestle and crush to a paste. Transfer to a large bowl, add the olive oil and rosewater and mix well. Massage the marinade into the chicken then cover with plastic film and place in the fridge for 2 hours.
Preheat a char grill or BBQ plate to medium high. When hot, cook the chicken, turning regularly, for 20 -25 mins or until charred and cooked through. (Alternatively heat one tablespoon of olive oil in a frying pan over high heat and sear the chicken skin side down, for about 2 minutes, then roast in a 200C oven for 20-25 minutes or until cooked through).
To make the dressing place all the ingredients in a bowl and stir to combine.
To serve, pour the dressing over the hot chicken and scatter with almonds, mint and watercress sprigs. Garnish with rose petals if using and serve with Spinach, Rice and Yoghurt Salad with Almonds.

Spinach, Rice and Yoghurt Salad with Almonds
3 cups cooke long grain rice, kept warm
4 handfuls english spinach, shredded
1 bunch flat leaf parsley, finely chopped
1 cup cooked peas
1/4 cup toasted almonds
1/2 large red onion, sliced
1 1/2 cups plain yoghurt
1 lemon juiced
100 ml extra virgin olive oil
sea salt and freshly ground black pepper
toasted almonds, extra, crushed
Place the cooked rice in a large bowl. Add the spinach, parsley, peas, almonds and onion and stir well.
Combine the yoghurt, lemon juice and olive oil in a small bowl. Season to taste, stir until smooth, then pour over the rice mixture. Top with crushed toasted almonds.

Last Summer

Wonderful Wellies!





Well at last I have my very first pair of wellies! I have always wanted a pair of these - especially after living in Ireland but when you live in the middle of drought ravaged Queensland there's not much call for them! Anyway, now I live in Tassie and we've just had the wettest winter in many many years and our new block of land is saturated!!! So today I bought myself a pair of very cool red paisley wellies and I think they will be my second favourite shoes ...after my slippers (yes, I am a comfort girl!)
I plan to become a garden guru turning our bare block into a feast of flora! I don't really know much about gardening but now I have my wellies I think it should be smooth sailing right through to Open Garden Scheme 2020 - that's my goal - to have such a marvellous garden that everyone will want to come and visit it and learn from my expertise .... well you have to have goals so watch this space!
As you can see from the photos, Dougal couldn't take his eyes off them!

Enjoying the Snow


Last weekend we went up Mt Wellington to enjoy a bit of snow time. It was bitterly, bitterly cold and one can only stay out in the blasting minus zero degrees for so long! But it was a lot of fun and very refreshing. I had to hang on to Rob so I didn't get blown away!

I Love Books!






We are finally experiencing some sunshine after nearly 3 weeks of grey skies and rain.Yesterday was about 15C and sunny so I threw off my boots and woollen tights and went barefoot! Probably a little rash, but the weather was glorious ... by comparison!

This morning I spent some time in the book store and bought two gorgeous books which I thought I'd share with you.

The first is a cook book by Sophie Dahl and the text, recipes and photos are all fantastic. I'm thinking if I can cook like Sophie, I might end up being as glamorous as her too! I can't wait to get cooking and baking. Lots of user friendly recipes.

The second one is called Dig and it's all about gardening. I thought that since I will have the task of turning 2 acres into a lush paradise in the near future, I'd better learn something about gardening! So for the rest of the day I will be sitting in a sunny spot (inside) reading my new books ... the perfect day!

Too Exhausted to Blog!


I am still recovering from this week's Wakakirri! I really don't do late nights!

Anyway, the weekend is here and I've just made a batch of pear and walnut muffins from Bill Granger's 'Holiday'. They are in the oven as I type but I will get a photo of them when they come out. I'm going to eat one with a cup of .....COFFEE! I haven't had a coffee in nearly 3 years but am getting really sick of tea and have decided I need more variety. So I bought a bottle of hazelnut syrup to add to the coffee to make it more palatable! I will probably be unable to sleep tonight from the caffeine hit..and the excitement!

The Best Biccies Ever!

Last week I brought you the best cake in the world, well this week it's the best biccies ever!
Both recipes include bananas which must mean I have a particular leaning toward the delicious yellow fruit... just like my dad!
Anyway, these are called Nikki's Healthy Cookies and you can find the recipe on my favourite food blog http://www.101cookbooks.com/ I made them this afternoon and ate half the batter prior to cooking. But I don't feel guilty at all as these little lovelies contain no sugar, flour or butter and are mostly full of healthy ingredients. The main ingredient is 3 mashed bananas! I have to stop eating them now because I'm cooking roast pork for dinner and I want to have plenty of room for that! The Land
Well, the soil testing was completed this week and it made no sense to me, all I know is that we will be building our house on top of lots of clay and jurassic dolorite rock! What that means for building, I'm not sure but it sounds kind of creative and creepy! Anyway, after talking to the architect Rob was satisfied that the report was all OK so we are still going ahead with the purchase.

Visit to the Block



We went out to the block today to have a bit of a look around. The ground is so wet and mossy I'm going to need gumboots ... or maybe next time I shouldn't wear fabric sneakers! Anyway, I'm pleased to say that we're still happy to be buying it - which is good! I found this little nest of Plover's eggs sitting on the ground. They seemed way too big for such a small bird!

World's Best Banana Cake

I thought I'd share with you my favourite cake recipe. I love it because it's delicious, easy and has some healthy ingredients! This recipe comes from a little gem of a book my mum gave me many years ago. It's the Catholic Women's League of Australia - Toowoomba Diocese Cook Book and this recipe is from Daphne Shankey of Roma. Thanks Daphne!
I've added cream cheese icing from another recipe which just makes it even better.
Banana Cake
Ingredients:
2 tsp lemon juice plus enough milk to make 1/3 cup
1 1/4 cup SR Flour
3/4 cup sugar
1/2 tsp salt
1/2 tsp bi-carb soda
90 grams margarine (softened)
1 or 2 mashed ripe bananas
1 egg
1/3 cup walnuts
Method:
Grease 23cm sandwich or 20cm ring tin. Set oven at moderate 180C (350F) Leave lemon juice and mild about 5 minutes until milk thickens. Sift flour into large bowl, add sugar, soda and salt. Add softened margarine, banana and milk. Mix at low speed electric mixer or with wooden spoon. Add the egg and beat 2 minutes longer. Stir in walnuts. Bake in moderate oven 35 mins (approx). Cool in tin for 5 minutes then turn out.
Icing:
1 tbsp butter
125 g cream cheese
2 cups icing sugar
juice 1/2 lemon
1/2 tsp vanilla
Beat together with electric mixer then top with more walnuts.

Roller Coaster Ride







We've mae the plunge and bought just over 2 acres of beautiful land in the Tassie countryside. We are currently organising soil tests, searches and finance and should be able to claim it as our own in about a month. It is simultaneously exciting and terrifying! I have no idea of what the house will look like as every time I try to imagine it, all I see is a big gas stove, some big glass doors and lots of sun. Hopefully those elements will come together to make a house... eventually!
